Thai spicy seafood salad recipe - Thai food for healthy


INGREDIENTS:

  •          1 Tbs. table salt
  •          3/4 lb. medium (51 to 60 per lb.) fresh shrimp, peeled and deveined
  •          1/2 lb. cleaned squid, bodies sliced crosswise into 1/4-inch rings and tentacles cut in half if large
  •          8 mint leaves (finely shredded). - Generous sprig of fresh coriander, including the stalk (roughly chopped). Coriander is also known as cilantro, Chinese parsley or dhania.
  •          1/2 red pepper, thinly sliced.
  •          2 fresh lemongrass stalks, trimmed and thinly sliced.
  •          1/4 of a cucumber, thinly sliced into 5 cm strips.
  •          2 spring onions, cut into 3 cm long strips.
  •          1 ripe tomato, sliced

 And for the spicy dressing:

  •          1 clove garlic (finely chopped or crushed)
  •          2-4 bird’s eye chilies (finely chopped). Adjust to taste.
  •          1 tablespoon of fish sauce.
  •          Juice of half a freshly-sliced lime.
  •          1 teaspoon of brown sugar.

METHOD:

1.    To cook the seafood, bring a 3-qt. saucepan of water to a rolling boil over high heat. Add the salt and let the water return to a boil. Pour the shrimp/prawn and squid into the boiling water and cook until the largest one is pink on the outside, opaque on the inside, and just cooked through, about 2 minutes. The water may not return to the boil before they are done. Scoop them out with a slotted spoon and drop into the bowl.

2.    For the salad: simply add each item to a mixing bowl.

3.    Then add the dressing and toss gently, but thoroughly, together.

4.    Serve on lettuce leaves at room temperature with garnish of your choice.

5.    Note; clear glass noodles can also be added to the salad to give additional texture.


Choose the best lemons:
Look for unblemished, firm lemons that feel heavy for their size and have tinges of hard green (which means they're underripe). Avoid very pale and very yellow lemons, as they are older and will contain less juice. The best lemons for juicing or serving in wedges are those with a smooth, thin skin.

Coconut Flavored Sticky Rice Recipes - Thai food tradition by Nong & Joshua


Coconut Flavored Sticky Rice 

Ingredient

  • 500g Glutinous Rice with Snake Fangs (Old sticky rice) 
  • 1 cup of alum (if you don't have it's fine)
  • 300g Coconut milk 
  • 200g granulated sugar
  • 1 1/2 teaspoons salt
  • 3-4 pandan leaves, sliced
  • Mango (Nam Dok Mai Mango, Mangifera indica or Mango (okrong))

Cooking glutinous rice

  • Wash the glutinous rice snake fangs with alum by turning on the water to cover the glutinous rice.  (If there is no alum Skip this step.)
  • Bring alum to scrub lightly with sticky rice. Then rinse with 2-3 water.
  • Then rest the sticky rice for 4 hours.
  • Pour water into the pot about 1/4 of the pot. Add the pandan leaves to add flavor. Turn on the heat until the water boils.
  • Put the glutinous rice into the steamer, steam for 30 minutes, but have to turn over the rice every 10 minutes.

Make Coconut Milk with Sticky Rice Moon
  • Mix the coconut milk, sugar and salt together without overheating.
  • Add glutinous rice that has been steamed and cooked hot. Into the prepared coconut milk, slowly stir in the same way and set aside for 20 minutes.
  • When the time is up, the glutinous rice will absorb the coconut milk until it is saturated. and ready to eat

Creamy Shrimp Tom Yum Soup

One of the most famous of all Thai foods, and what I think is one the best soups in the world, is Thai tom yum kung.

Tom Yum Kung is a traditional Thai soup dish that originated in Thailand and is believed to have been developed over a thousand years ago. The dish is made with a mixture of ingredients such as lemongrass, kaffir lime leaves, galangal, fish sauce, lime juice, and chili peppers, among others. It has a unique flavor that is sour, spicy, and savory and is often served with shrimp or other seafood. The dish is considered a staple of Thai cuisine and is widely popular not only in Thailand but also in many other countries around the world. Today, Tom Yum Kung is one of the most well-known Thai dishes and is enjoyed by people from all walks of life.

Ingredients
  • 2 liters of water
  • 4 stalks of lemongrass
  • 1 inch chunk of galangal
  • 10 kaffir lime leaves
  • 10 Thai chilies
  • 5 cloves of garlic
  • ½ kilo shrimp
  • 300 grams of oyster mushrooms
  • 2 roma tomatoes
  • 2 white onions (medium sized)
  • 2 teaspoons of sugar
  • 8 - 12 tablespoons of fish sauce (depending on your taste)
  • 8 - 12 tablespoons of lime juice (10 - 15 limes) Handful of cilantro

Creamy tom yum version (Tom Yum is sometimes made with coconut milk. You can add a splash of coconut milk to the soup if you like, at the end.)
3 tablespoons canned Thai roasted chili sauce (nam prik pao)
10 tablespoons evaporated milk

Taste test, you may need to add more lime juice or fish sauce as the milk and roasted chili sauce throws off the sourness and saltiness.

Method
  1. Pop the Heads. As mentioned, whole shrimp with heads is a very important ingredient, because you need to make “shrimp oil” to achieve the right flavor. The oil is made from sauteeing shrimp heads in oil, to release the shrimp flavor into the oil. Pull the heads off the shrimp and place them in a wok or large skillet.
  2. Sizzle. Add the oil to the skillet. Add a good pinch of salt. Sauté the shrimp heads in the oil, cooking until they are red and crispy, and the oil is red as well.
  3. Smash. Trim the lemongrass stalks and galangal. Use a meat mallet or the side of a knife to smash the lemongrass, kaffir lime leaves, onion, chilies, and galangal. This helps release their flavors into the broth.
  4. Simmer. Place the aromatics in a medium soup pot and add water. Simmer for 5-10 minutes, until the broth smells fresh and fragrant.
  5. Shrimp It Up. Stir in the mushrooms, shrimp, and fish sauce. Simmer just long enough for the shrimp to cook.
  6. Shrimp Oil. Stir in the shrimp oil and lime juice. Then throw the heads away.

Thai Steamed Cone Cake (Kanom Kruay) - Thai Dessert Food Recipes


Thai desserts can be breakfast with tea or coffee. 
It has a slightly sweet taste and has the oiliness of coconut. 

Ingredient::
  • 1 cup rice flour
  • 3 tablespoons of chickpea flour
  • 3/4 cup sugar
  • 1 cup water
  • 3/4 cup coconut milk
  • 1 teaspoon salt

Method::
1. Mix rice flour with green bean flour, add water little by little, knead well and add a bunch of sugar to it.
2. Continue kneading until sugar and flour are well combined. Add all the water, stir well.
3. Add rice flour, salt and coconut milk. Stir well.
4. Instiller ingredient 1. Into the prepared banana leaf cone, then instille the mixture 2 into about 3/4 of the cone, insert the cone into the hole of the reach nest, leaving a space for steam to steam in boiling water for the dough to cook, and set aside to cool, so put the container in a container.
