Dragon Fruit Jelly, sweet and cool, Thai snack - Thai Food

Dragon Fruit Jelly

Hot weather invites you to try making "Dragon Fruit Jelly," a refreshing and colorful dessert. It's also a great gift idea! If you're not fond of plain dragon fruit, you can transform it into jelly, creating a beautiful treat that can even fool the kids. I personally think it's delicious!

Actually, the idea of dragon fruit jelly came from a book, but I can't remember which one. It's been a long time. The book included a recipe for making dragon fruit juice, which is said to have many health benefits. I couldn't recall it anymore (^^"). So, I decided to modify it and turn it into dragon fruit jelly. It's wonderfully sweet and cool.


INGREDIENTS:
Peel the dragon fruit and wash it clean. Then, slice it into rectangles or roughly chop it. Dice the dragon fruit flesh into small cubes. For sweetening, ideally, you'd use brown sugar, but if you don't have any, you can substitute with granulated sugar. As for the jelly powder, you can use any type of jelly powder for desserts. I happen to have jasmine-scented jelly powder, so I added that too. Oops... got a bit carried away (^^").  
Take the clean dragon fruit peels and roughly chop them. Then, boil them in clean water. Today, I used four dragon fruit peels and boiled them in about 5-6 cups of water.

Once the dragon fruit peels start to soften, add 6 cups of water, 1 tablespoon of agar powder, 1 sachet of konjac jelly powder, and 1 cup of granulated sugar. Continue boiling until the mixture comes to a boil again, then turn off the heat and let it cool for a moment.

 Take the dragon fruit peel that has been boiled and strain only the water. The color is so beautiful!~ ^^

 Once the dragon fruit water starts to warm up a bit, pour it into the molds. But don't wait until it's too cold, or the jelly will start to set and become difficult to handle.

If you don't like jelly, you don't need to add gelatin powder. You can use dragon fruit water for snacking, adding ice and dragon fruit flesh into the dragon fruit water.

This type of bowl is plastic. I bought the bowls at Chuan-Chom shop, and each leaf costs about 15 baht.

 They sell it in packs, each pack contains ten leaves. Today, I used five leaves, and I'll keep the rest for later use.

 The reason it's more expensive is probably because it comes with a lid. My child says it looks really nice. ^^

 If you don't want to spend on printing costs, I suggest using recycled materials. This one is a dessert box bought from a department store, cleaned, and ready to use. ^^
